I forgot that I also had paella from a stand called "Paellaria", and I think my hunger overrode the fact that I 1) still don't like paella (too mushy) and 2) couldve been a done with more flavour and less runner beans. It was aiiiite tho

My VLNF Teammates, Nino & Trinity’s FULL Backside Workout @cityathleticclub in Las Vegas 2 weeks ago.  This backside workout consisted of exercises for the upper back, triceps, mid back, lower back, glutes, hamstrings and calves 😲😳. Lox bagel 100% vegan! 
Tomatoes are the key to this silky salty bagel topping. 
Using a sharp knife, score a fresh tomato and boil for a few minutes then drop in an ice bath and easily remove the skin. Cut the tomato into large pieces removing the insides and seeds. Allow the tomatoes to marinade in a seaweed reduction (recipe coming later this week, doubles a vegan-fish sauce) for several hours or overnight. Sprinkle the pieces with salt and spray with vegetable oil then massage in. 
Literally the best flavor and texture dupe I’ve found so far, SO decedent and completely cruelty free!

This week's meal prep (made a few days ago) 💚 Veggie stir fry with crispy baked tofu and a peanut sauce 💚 For the crispy baked tofu I marinated cubed tofu in turmeric, cumin, sriracha, tamari and garlic powder. I then baked the tofu in the oven until crispy. Topped with sesame seeds and spring onion 💚 For the stir fry I added fresh ginger, garlic and a splash of water to a pan and after a couple minutes I added cumin, turmeric, chilli flakes, sriracha, maple syrup and tamari. I then added vegetable stock, stirfry veggies and fresh coriander. Separately I cooked rice noodles before adding to the veggies and taking off the heat 💚 For the peanut sauce I blended 1/3 cup of peanut butter, 1 tablespoon of rice vinegar, 1 table spoon of tamari, 2 tablespoons of sriracha, a thumb of ginger, 3 small garlic cloves, the juice of a small lime and 1/3 cup of coconut milk 💚 When serving, I mixed everything together and poured the sauce on top 💚 With the leftover sauce I marinated some tofu and baked in the oven and omg this actually tasted like chicken satay. If I hadn't made it myself I would have thought someone was tricking me!! 💚

Meal diary from yesterday. Mental note: get a slab of cheap marble or something for food pics bc I took these on our cement patio garden area. 🤣 We’re running low on groceries which means I’ve got to stock up on more beans and lentils (how I usually add more protein throughout my day), so I leaned pretty heavily on mock meats which I don’t LOVE to do, but also they’re great in a pinch. And taste really good. And are better for the environment and don’t cause unnecessary harm and aren’t filled with antibiotics. Ok rant over, onwards and upwards! :)

Ezekiel toast with salsa and some homemade almond parmesan cheese, scramble with 6oz tofu, 2 slices @lightlifefoods smart bacon, bell pepper, Swiss chard.

LUNCH:
Shredded broccoli and red cabbage salad with edamame, @beyondmeat chicken strips, cashew cheese for sauce, sliced radish, @wildbrine sauerkraut.

POST-WORKOUT SMOOTHIE:
Protein smoothie w/ 2 scoop @drinkorgain chocolate protein powder, coffee, ice, 1/2 frozen banana. Legit this tasted like a Dunkin Donuts coffee coolatta! HOLY MOLY SO GOOD.

DINNER:
2 cups steamed broccoli, 1 cup edamame, @beyondmeat chicken strips.

UNPICTURED:
1/2 nectarine for a snack and 2 Hell or High Watermelon beers at my skee-ball league night!

Protein: 136g Carbs: 219g Fat: 44g

🌱Organic Moringa (from seed) Update!🌱 I had to separate a few of these cuties after they started crowding each other into buckets I’ve accumulated from work. One of the smallest babies almost didn’t make it but has since perked after a good watering and vibrant sun rays.🍁 We can’t wait to get the makeshift greenhouses up before the autumn weather hits and these babies are certainly going in there. We are even hooking up some grow LED lights soon to start germinating inside for the winter. Happy dance!😻🌳#moringa #growing #growfoodnotlawns #superfood

One of the smallest babies almost didn’t make it but has since perked after a good watering and vibrant sun rays.🍁 We can’t wait to get the makeshift greenhouses up before the autumn weather hits and these babies are certainly going in there. We are even hooking up some grow LED lights soon to start germinating inside for the winter. Happy dance!😻🌳#moringa #growing #growfoodnotlawns #superfood

Was craving nachos today— I crumbled up organic tempeh and cooked it with some Mexican spices. Topped with spinach, vegan queso (daiya cheese, almond milk + salsa melted together), tomatoes and avocado! I also made my own homemade salsa! 🌮🌮🌮🌮🌮

My go to breakfast- today I didn’t have any ripe bananas so I did different toppings. 🍌 Unsweetened açaí bowl with GF vegan granola, organic coconut flakes, goji berries + chia seeds! Can drizzle honey or agave on top if desired. 😍🤤

I like the trees that’s filled with all its green leaves and it shows its beauty in its truest form with different colors of the leaves, fruits and flowers. It’s so full that it’s gives you the feeling of positivity and fullness but what attracts me even more is this leafless (not life-less) tree that has nothing but still everything, it is colourless yet beautiful and standing tall with all its glory coz it sure knows that one day it will be full again and it will provide the shade again and catch the raindrops as it falls and be home of the chirping birds. 
It will change its color as the time passes by and it will still be as proud as it was when it had nothing or just everything. 
Nature teaches us life’s deepest learning if keep an eye for it. “Stand tall coz u r beautiful today and tomorrow and everyday !!”
