🍎FOODIE FRIDAY🥦

SWEET & TANGY GRILLED CHICKEN🍗

What You Need
Serves 6

4 Tablespoons honey
4 Tablespoons spicy mustard
1 teaspoon grated lemon peel
2 teaspoons low-sodium soy sauce
½ teaspoon minced garlic
6 boneless, skinless chicken breasts

Instructions

1. Pre-heat your grill. If using coals, heat until the coals turn gray and there are no longer strong flames, 35-45 minutes. If baking, heat over to 375 degrees and bake for 35-45 minutes. 
2. Combine honey, mustard, lemon peel, soy sauce and garlic. Mix well. Reserve a few tablespoons of the sauce. Add chicken and marinate in the refrigerator for 40 minutes.

3. Cook the chicken 5 to 6 minutes per side. Brush with the reserved sauce, and continue cooking for an additional 3 to 4 minutes per side, until chicken registers 170 degrees a on a meat thermometer. If baking cook just how it is in a baking pan. Serve with a side of veggies. Enjoy!

One serving equals: 183 calories, 2g fat, 13g carbohydrate, 0g fiber, and 28g protein.

Alloraaaa... mi sono resa conto di non aver mai postato la mia ricetta dei pancake 🥞 dolci 😝 l’ho postata una volta nelle stories ma non qui.. beh rimedio subito.. e vi dico già che molte di voi l’hanno provata e mi hanno scritto che vengono benissimo (anche con altre farine). Cosa che mi fa molto piacere 🥰
Ora potete salvarla e tenerla sempre a portata di mano 👩🏽‍🍳

Frullare a secco:
3 cucchiai di fiocchi d’avena
1 cucchiaio di semi di chia
Poi aggiungere:
3 cucchiai di farina integrale (o quella senza glutine)
1 cucchiai di zucchero di cocco 🌴 
1/2 cucchiaino di lievito per dolci
Mescolate bene e aggiungete l’acqua o una bevanda vegetale che preferite finché non ottenete la consistenza desiderata ❤️

p.s. quelli che vedete nella foto li ho fatti aggiungendo un po’ di polvere di barbabietola e un po’ di matcha blu. Topping: yogurt di cocco e frutta 😊

Soooooo ... I realized that I never posted my sweet pancakes recipe (only salted one) 🥞 😝 I posted it once in the stories but not here ... and I tell you already that many of you have  tried it  and you wrote me that they are very good (even with other flours). Which makes me very happy 🥰
Now you can save it and have it in your favorite section 💁🏽‍♀️

blend this dry ingredients:
3 tbsp of oatmeal flakes
1 tbsp of chia seeds
Then add:
3 tbsp of wholemeal flour (or gluten-free flour)
1 tablespoon of coconut sugar 🌴
1/2 teaspoon of baking powder
Mix well and add water or you favorite vegetable drink until you get the desired consistency ❤️

P.S. those you see in the picture I made them by adding a tsp of beet powder and a bit' of blue matcha. Topping: coconut yogurt and fruits 😊

Iodine is a trace mineral that we need to intake every single day. The majority of iodine in our body (80%) is stored in our thyroid gland, where it is used for the synthesis of thyroid hormones.

Many moons ago, when people started realizing the benefits of cruciferous vegetables, they began eating more of them. But simultaneously, those people started consuming more processed, packaged foods, and natural, whole food sources of iodine were being cut out!

The problem is, raw cruciferous veggies can cause hypothyroidism (an under-production of thyroid hormones) in people who do not intake enough iodine. Thankfully, the U.S. government mandated in 1924 that our salt be enriched with it because it is so important—probably one of its better nutritional decisions!

Here I present foods that are naturally high in iodine, so that if you chose to not use processed, enriched salt, you can still meet your daily requirements (I do not use iodine-enriched salt). Keep in mind, the daily recommended intake of iodine is 150 mcg per day for non-pregnant, non breast-feeding adults but pregnant adults need to consume more.

BROILED LEMON-GARLIC LAMB
Serves 2
Per serving: 1 lean, 3 green, and 3 condiments
Ingredients
● 2 cloves garlic, minced
● ¾ lb (12 oz) raw, boneless lamb chop loin* (should yield two 5-oz cooked servings)
● 3 cups fresh spinach
● 1 cup portabella mushrooms
● ½ cup cherry tomatoes, halved
● 1 Tbsp tsp fresh lemon juice
● 1 tsp dried rosemary
● ¼ tsp freshly ground black pepper
● Non-stick cooking spray
Directions
Lamb: Preheat broiler. Trim all visible fat from lamb. Spray rack in broiler pan with non-stick cooking spray for 3 seconds. In a small bowl, combine garlic, dried rosemary, and black pepper. Place lamb on prepared rack and cover with half of garlic mixture. Broil 4 minutes, 4 inches from heat; turn lamb over. Cover lamb with remaining garlic mixture. Broil 2-4 minutes or until cooked through.
Vegetables: Spray medium skillet with non-stick cooking spray for 2 seconds and heat over medium heat. Add mushrooms and sauté. Once mushrooms are near desired tenderness, add spinach and tomatoes and sauté an additional 2-3 minutes. Serve lamb over vegetables.

A lot of you may know, that I’m not a fan of monitoring weight loss by only using the scales, I prefer to monitor progress by taking measurements and then checking progress every 4 weeks so that the focus is on making healthy choices for your whole well being, and to help encourage new habits that are sustainable, but I do understand that for many, its the quickest and easiest way to monitor how things are going. * * *

If you’re going to weigh yourself I would say that the morning, after using the bathroom and before you’ve eaten or worked out, is a great time to step on the scale. * * *

Because your weight fluctuates throughout the day, keeping to a specific time gives you a more accurate read. * * *

Weight loss is a common endeavour at this time of year, and shrinking the numbers on the scales is usually a key part of this. * * *

My concerns about using the scales as your sole way of monitoring weight loss is the negative feelings that the numbers can cause. Not achieving your weight loss goals on a daily/weekly basis can cause negative emotions towards the process, or cause you to give up entirely. * * * “The number on the scale should not have the power to dictate your mood, the events of the day or your overall quality of life - it’s just a number.” * * *

If you like to use the scales as a way of monitoring your weight then I would suggest weekly weigh-ins. This can be better, as you don’t focus on small fluctuations in your weight, which could be caused by many factors. * * *

Made these @bobsredmill steel cut oats early in the morning which have more protein than regular oats and just take a bit of prep on the stove. Added some cinnamon and coconut oil in the pot and voila, topped with my main ingredients and a hoop of natural PB 💪🏾. Bowl inspo by my fave @cleaneatsbytay 🙏🏾

Did not feel like cooking last night, couldn't work out yesterday thanks to this infection and pain so because I didn't sleep Wednesday night because of it, and was too tired to make dinner and tired of cauliflower rice haha, we went to dinner Thursday night... Doesn't mean I got off plan! Turkey burger, lettuce wrapped with cheese, bacon, tomato, onion, and a side salad :) thanks to meds I am feeling better today so my workout will happen tonight. I could have had fries last night like I really wanted, I actually ordered them, but then realized I would not enjoy the after feeling so I switched it to salad! It's all about mindset...

I have goals and want to finish this program strong so although it's supposed to end Saturday and now will end Tuesday thanks to this medical stuff, I'm sticking to it! If you have determination that's what gets you through.. I'm down ten pounds so far from this awesome program ;-) and it's been 2.5 weeks!💪 No excuse November is still here, let me help you stop the excuses and go into the new year stronger than your excuses. Shrimp and Guacamole are meant for one another 🤤🤤 and my tummy too

Cilantro Lime Shrimp with Guacamole

Cilantro Shrimp
1/2 lb of raw shrimp (peeled & rinsed) 
1 garlic clove (minced) 
1 tbsp of cilantro 
Paprika 
Sea salt & pepper 
1/2 a lime for juice 
1 tbsp of Unsalted butter 
Guacamole
2 avocados (mushed)
1 tbsp of brown onions (minced) 
1 Serrano Chile (seeded and finely chopped)
Cilantro 
1 garlic clove (minced) 
Sea salt & pepper 
1/2 of lime for juice 
Directions 
Make guacamole first, use a bow to mix all ingredients and set aside. 
On medium high heat, add butter to pan and let it melt. Add shrimp, garlic and season with paprika, salt and pepper. Cook shrimp for about 5-7 mins or until pink. Turn off heat, add cilantro and squeeze lime on top. Lightly toss.

To me, it means eating not to look a certain way but to fuel my body.

I don’t count calories and I don’t diet.

I look forward to all my meals and I eat without guilt.

I love chocolate, peanut butter, pizza and fries but I also love a big colorful salad, coconut oil in my coffee, loaded oatmeal, avocado & all the berries. •
Healthy to me means staying away from processed foods, and I truly enjoy cooking and meal prepping at home. •
I love being inspired and trying new things; my relationship with food is a special one because GOOD food equals good MOOD!!✌️

Apple Cinnamon Protein Donuts. Who is going to try these? 🙋🏼‍♀️ you won’t be disappointed the flavor and consistency is 👌🏼

Ingredients:
- 3/4 cup almond flour - 1/4 cup coconut flour
- 1 scoop @arbonne vanilla protein powder - 1/2 tsp baking soda
- 2 tsp cinnamon - 1/4 tsp all spice - 1/4 tsp nutmeg - 1/3 cup unsweetened applesauce - 2 @vitalfarms eggs - 2 TBSP @madhavasweet agave - 1 tsp vanilla extract
- 1/3 cup Apple cider (optimal and will be okay without it...I made my own
Topping:
- 1 tsp cinnamon - 1/3 cup coconut sugar - 2 TBSP Coconut oil •

Instructions:
Combine all the wet ingredients and dry ingredients separately. Now mix together and put in a greased donut pan and cook at 350 for 16-18 minutes or until Desired consistency. Once they cool dip into coconut oil and the sprinkle cinnamon/sugar mix. I stored in the fridge for a week. Enjoy 💕 •

Vegetable fried rice and roasted potatoes with curd.
Made from leftover rice from yesterday's dinner, this is one awesome rice preparation that I love the most. It's full of veggies that are invisible to the naked eye (read Tiny's eyes.. lolzz). I've put mushrooms, cauliflower, spinach, carrots, peas, onion and garlic in it. All finely chopped. Yum and healthy.. this was my today's lunch.

Ok, who orders pizza on Friday nights? 🙋🏽‍♂️🙋🏼‍♀️. Pizza is listed as one of the most consumed foods in #america in various consumer polls (@time , @cnntravel , etc) but many times, the toppings we choose (and extra amounts of cheese and oils) can add hundreds of calories, extra fat and can make conventional restaurant pizza tough to digest for many. Making your own pizza at home is a quick and healthy way to please the fam (👨‍👩‍👦‍👦) and eat your veggies and clean proteins. Gluten free pizza shells and flatbreads (or try tortillas!) are available at many grocery stores as are whole grain options, if making your own pizza dough ain’t happening on Friday night. Our favs? Tomato sauce, goat cheese and roasted peppers/onion/fennel, and buffalo chicken/green onion/homemade blue cheese sauce/cilantro. Involving the kids in picking out, and creating,  their own toppings is a fun way to make Friday night dinner fun, too. We ❤️ pizza but also love being able to add our own veggie combinations, control the amount, and type, of cheese (or, no cheese at all), and know that We am eating what makes our bodies feel best. 🍕 ⚓️. Making meal prep super easy with this lamb meatball zoodle recipe below 🍝⠀
——⠀
👉🏼 Ingredients⠀
• 2 tbsp Extra Virgin Olive Oil⠀
• 4 large zucchini⠀
• 600 ml (approx 3 cups) Tomato passata⠀
• 600 grams ground lamb (10% fat). You can use turkey, chicken or beef instead. • 1 avocado⠀
• 1 tbsp of each dried mint + oregano⠀
• 1/2 tbsp ground cumin⠀
——⠀
👉🏼 Recipe.⠀
1. Mix all meat and spices in a bowl until well combined.⠀
2. Heat saucepan to medium. Add the oil.⠀
3. Form large balls around 1.5 inch big. Add to the pan and allow to lightly brown.⠀
4. Add the tomato passata and bring to a gentle simmer and reduce to a low heat. Cover with a lid and leave to cook for 30 or more minutes. (Alternatively put in a low oven at 130c for a few hours)⠀
5. Spiralise the courgettes. Either steam them which I done or use another pan to sauté for a few minutes until lightly cooked.⠀
6. Smash the avocado with a fork, add a splash apple cider vinegar to reduce browning.⠀
7. Remove meatballs and divide into 4 portions. Add the avocado on top and season to taste.⠀
