Leaves on a cruise to Mexico this weekend...🛳 Is determined to eat everything BUT Mexican food this week!💃🏼 (Ahh you wouldn’t believe how hard it’s been!😬) But these BBQ TURKEY MEATBALLS are definitely making things just a little bit more tolerable.🙏🏻 And while the star really should be those meaty balls, I gotta tell ya I was all over that there cauliflower rice -GAME CHANGER- add mushrooms to your cauli rice!🤯 I loveee sneaking extra veggies in anywhere I can & these were such a flavorful addition! (Plus helped me clean out the fridge of all my leftover veg so #winning 🙌🏻) Oh & those meatballs?? Yep there’s veggies in those too!😉

How I made the plantains 👇

Slice plantains to desired thickness 
Heat 1 tbsp ghee or butter over medium heat in a skillet 
Add the sliced plantains in a single layer to the skillet 
Cook till browned for several minutes on each side

Salmon & Asparagus with Pepper Puree

Prep time: 20 minutes Cook time: 25 minutes Yield: 1 serving

Ingredients:
6 oz raw salmon (yields 5 oz when cooked)
1 cup fresh asparagus
¼ cup red bell peppers, diced
¼ cup raw tomatoes, diced
1/8 tsp salt
½ cup water
2 Tbsp red wine vinegar
10 sprays non-stick cooking spray
¼ tsp pepper

Directions:
1. Preheat oven to 350° F.
2. Dice tomatoes and peppers; place on a cookie sheet and lightly spray with non-stick cooking spray.
3. Lightly season both sides of the salmon with salt and pepper. Place salmon in a baking pan and add water.
4. Bake salmon and vegetables for about 20-25 minutes.
5. Boil water for asparagus. As it heats, clean and trim asparagus ends. Leave as whole stalks or cut in half. Place in boiling water and cook about ten minutes or until tender-crisp.
6. After removing peppers and tomatoes from oven, let cool two to three minutes. Place in a blender, add vinegar and blend until the consistency of applesauce.
7. Arrange asparagus on a plate with salmon on top. Drizzle puree over salmon.
Add salt and pepper to taste.

Per serving: 400 calories | 16g fat | 12g carbohydrates | 46g protein

Blacken Ahi Tuna 👇🏼 Makes 2 servings
 Per serving
 1 Leanest protein... 3 condiments
 2 fats

Ingredients:  1 ¼ pound ahi tuna
 ¼ tsp ground ginger
 ¼ tsp oregano
 ¼ tsp pepper
 1 tsp blackened spice mix
 ½ tsp cayenne pepper
 ¼ tsp fennel seeds
 1/2 tsp paprika
 2 Tbs butter
 1/8 tsp cloves 
Directions:
Combine all dry ingredients in a bowl and mix well. Store in an airtight container. Mix thoroughly before each use. In a heavy saute’ pan over medium heat, heat butter or oil. Place both ahi steaks in the saute’ pan, flipping to cover both side with fat. 
Generously coat exposed side with the seasoning and immediately turn tuna over to coat the other side. Increase heat to medium-high and cook on one side approximately 2 minutes, until seasoning blackens. Turn steaks over and repeat, adding more butter of oil if needed.  Remove ahi steaks from pan and serve with a side of vegetables.

¼ tsp pepper

Directions:
1. Preheat oven to 350° F.
2. Dice tomatoes and peppers; place on a cookie sheet and lightly spray with non-stick cooking spray.
3. Lightly season both sides of the salmon with salt and pepper. Place salmon in a baking pan and add water.
4. Bake salmon and vegetables for about 20-25 minutes.
5. Boil water for asparagus. As it heats, clean and trim asparagus ends. Leave as whole stalks or cut in half. Place in boiling water and cook about ten minutes or until tender-crisp.
6. After removing peppers and tomatoes from oven, let cool two to three minutes. Place in a blender, add vinegar and blend until the consistency of applesauce.
7. Arrange asparagus on a plate with salmon on top. Drizzle puree over salmon.
Add salt and pepper to taste.

Per serving: 400 calories | 16g fat | 12g carbohydrates | 46g protein

This is what I eat when I’m a little low on protein and fats. Gammon and fish fingers is a weird combo, but the macros are P 52 C 24 F 23, with only 506 calories. Also it’s surprisingly tasty, try it :) (though don’t complain to me if you hate it, your the one who took me seriously, your bad :P)

- 200 gram ripe bananas approx. 3 small bananas
- 1 tbsp agave syrup
- 2 tbsp coconut yoghurt
- 2 Earl Grey Tea Bags steeped and cooled in ¼ cup water

- 1 cup chickpea flour
- ¼ cup rolled oats extra for topping

2 browning bananas 
1/2c coconut flour 
2 eggs 
1/4c milk 
1.5 tsp cinnamon 
1 tsp vanilla

1/2c Splenda (optional)

1/4c melted coconut oil/natural butter

Anybody seafood lovers out there? 😍 Who fancies these garlic and parsley buttered king prawns? They were so moorish and took minutes to prep and cook.. almost too easy! Here’s the deets: 1 pack of raw king prawns (serves two), two cloves of garlic, knob of butter and finish with fresh parsley 👌🏻.. When did eating healthy became so darn complicated? 🤦🏻‍♀️ A quick search online and you’ll find millions of suggestions on different types of diets, dos and don'ts, trendy foods and the list goes to the infinite and beyond!

No wonder so many people who want to make positive changes in their health end up doing nothing.

Can we be honest for sec? You don’t have to be a nutrition expert to know sugars are bad, eating bread every day isn’t the wisest choice and starving or overeating doesn’t feel good either.

Start with the basics - listen to your body - It’s always giving you feedback, you just got to pay attention.

And for the record, eating healthy can be extremely delicious and easy! I made this cauliflower chicken bowl in less than 10 minutes.

Here’s how I made it: cooked cauliflower rice in butter for about 5 minutes, added kale and 🍄- cooked for a couple more minutes. Added cooked chicken, seasoned with sea salt, pepper and garlic of course (gotta have garlic on everything! 😜). Drizzle homemade spicy mayo, served with a hard boil egg on the side and DONE!

I celebrated another lap around the ☀️ last week, and I have to say, I am completely humbled by the incredible people in my life. •
I was showered with so much love, I couldn’t help but to have a grateful heart for every person who I’ve crossed paths with. To my OTF and ARC fam, Florida friends I call family, and my fam and friends across the country, thank you and I love you! •
Birthdays give us an awesome opportunity to reflect. I faced many challenges this last year, and had ample opportunity to choose: let the pressure take me down, or summon my strength, become better, and rise up. I chose to grow, to learn, to become better. •
I also got to celebrate some incredible wins: placing in my last bodybuilding show, reaching a major promotion in my nutrition biz, moving down to Florida, coaching at OTF, allowing myself grace and freedom to thrive, but above all else learning to love myself and others the way Christ does: pure, fully, limitless, and without boarders.

Life is never linear, but rather a path full of joys, obstacles and challenges that we get to embrace, learn from and grow into. May this new lap around the sun be filled with delights I’ve never known! 💫

Yummy Root Vegetable and Cauliflower Soup made tonight with vegetables leftover in my refrigerator.  An onion, a leek, a parsnip, two carrots, three garlic cloves, and a blend of harissa spices with chicken stock.  So easy and delicious.  The cauliflower makes the soup thick and creamy. .

•🍃💥Red onions- best for eating raw. The attractive red onion most resembles the yellow onion in flavor. Sliced these on salads, burgers, sandwiches and guacamole 🍃🍃🍃🍃🍃🍃🍃🍃🍃🍃🍃🍃
•💥White onions- it is the crunchiest. A paler version of the yellow onion. White onions have lighter flavor. Get sweeter when it is sautéed. Use these for salsa, stir fry, chickpeas mocked tuna salad & pasta salad. 🌱🌱🌱🌱🌱🌱🌱🌱🌱🌱🌱

It is a great garlic substitute .

BOX DOODLE ✏️ 🖍 Like most children MyBoy loves to scribble whenever he gets hold of any writing/art media. I hope he acquires the artsy trait of his Dad, just like his big sissy. This momma has less tolerance for mess 😊 and before this printer box goes to the garbage chute, I might as well reuse it ♻️ He spent almost an hour scribbling and doodling. The fun was overwhelming when Ete (that’s what he calls his big Sis) @jhy.easel joined in. They had tutorials and drew whatever objects come to his mind. He scrawled over my fat cat 🐈 drawing... maybe he doesn’t like it... it was awful though 😂😂 Ete’s fat cat was awesome 👏🏻 Great for fine motor practice, hand-eye coordination, encourages creativity and keeps all surfaces scribble free😜
